I had re-heated spaghetti with meat sauce and an ice cream sandwich for desert.
Obviously I'm home alone tonight! :)

My son and I had my favorite soup recipe with cornbread. The recipe is so easy:



1 lb ground beef
1/2 onion chopped
1 can V8 juice
3 cans mixed vegetables drained
1 can golden mushroom soup
1 can cream of celery soup

brown the beef with the onion, add everything else, stir, bring to a boil, then simmer for 30 minutes.


Fast and great with cornbread!

Went to the gym after work so had leftover chili and a bowl of cereal. My hubby and daughter had Subway. I'm tired of Subway.

Roast with potatoes and onions and celery and carrots. Corn and homemade crescent rolls. Cookies for dessert. Raw veggies too. ;)

My husband worked really late last night (still trying to get done with harvest) and my daughter went with another daughter to have a "sister's" day with another daughter at her house. So I was home alone until about 11:00, so I warmed up some soup that we had the day before. It was Chicken Tortilla Soup. It's really good. Here's the recipe--

Chicken Tortilla Soup

2 cans-10 oz. each chicken (or you can use cooked chicken breast or left-over turkey)
1 can Rotel (or 1 can of tomatoes and green chilis-same thing)
2 cans chicken broth
2 cans cream of chicken soup
4 oz. Velveeta
1 can corn (optional)

Just put all of the ingredients in a pan on the stove or in a crockpot. Heat really good and let simmer for a while. I thickened mine with corn starch, but it's good if you don't thicken it. When you get ready to serve it, crumple tortilla chips in your bowl, like crackers, and mix with your soup.
