View Full Version : Homemade veggie beef soup
With this extreme cold weather we're having, soup seems a good way to warm everyone up, so I dragged out the crock pot and started tossing in the goodies.
I put an arm roast in water and have had it cooking on high for 24 hrs, so it's fallen apart nicely.
I added a tablespoon of spicy steak seasoning, a bit of salt and black pepper and minced onions.
I sliced potatoes, and added green beans, then shortly before it was done, I added a packet of brown gravy mix to add in beefy flavor.
It was very simple, and YUMMY!
So who else has a simple soup recipe?

An arm roast is??? it sounds yummy.
Arm Roast is from the "chuck" section of the cow. The chuck section comes from the shoulder and neck of the beef, and it yields some of the most flavorful and economical cuts of meat. The downside is that these cuts tend to be tough and fatty, and they have more than their fair share of bone and gristle. It's usually best to cook them slowly in a liquid. So they're great for soups!

Tink, your soup recipe sounds wonderful!! It's cold here also, (not as cold as where your at though)...
I have a favorite beer cheese soup recipe that's good. Here it is...
3/4 C butter
1/2 C thinly diced celery
1/2 C flour
6 C chicken stock/broth
2 TBSP Parmesan cheese
1/4 tsp Accent (if desired)
1/2 C thinly diced carrots
1/2 C thinly diced onions
1/2 tsp dry mustard
10 oz Velveeta
1 bottle beer
salt/pepper to taste
Melt butter, saute vegies until done but not browned. Blend in flour, dry mustard and Accent. Slowly add chicken stock/broth, bring to boil, cook, stirring, 5 min's. Blend in cheeses and beer. Let simme3r over low heat for 30 min's or so. Season to taste w/ salt and pepper.
Dont forget hot crusty bread to go along with the soup. YUMMY! :)

I just throw things in the pot. Tomatoe Juice, Potatoes cubed, Cabbage,
Corn, Greenbeans, Diced Tomatoes. If I have canned beef I throw that in.
A couple of boulion cubes, Carrotts Celery, A little Steak sauce. Chilli powder,
a Clove of Garlic. It's great. It always gets ate at my house. I don't measure anything. Family loves it.
