View Full Version : Easy & perfect banana bread!

I had never baked banana bread before, and was SHOCKED that this recipe not only turned out perfect the first time, but it was simple and easy and OH MAN SO DELICIOUS!!!!!

3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cup of flour

No need for a mixer for this recipe. Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

(I used 3 bananas (it's all I had) - also, it only took mine 45 minutes to cook instead of an hour, so just keep an eye on it b/c it depends on your oven, I guess. Oh, and I didn't butter the loaf pans, I just used the flour baking spray.) This made 2 loaf pans of bread. - You can add in nuts if you want, but I didn't in mine.

Thank you so much for the recipe. We love Banana bread here and the recipe looks easy. I've added it to Word so I can print it out.

Oh Yum!! The next time I have bananas this is what I will be making for sure. Slop tons of butter on it and I'm in heaven!! :p

I forgot the baking spray on the pans once...not a good thing to forget, lol.
