My daughter and I decided to try ALL new recipes for Christmas dinner (:eek:) I sure hope it turns out good. Here's our menu. What's your menu?

Cornish game hens
crockpot macaroni & cheese
green beans with ham hocks
twice baked sweet potatoes
corn casserole
dressing
cranberry freeze
Jefferson Davis pie
cake (can't remember the name, daughter is making it)

Here is the cranberry freeze recipe - sounds good to me, has anyone made it before?

12 oz cream cheese
4 T mayonaise (not miracle whip)
4 T sugar
2 cans whole cranberry sauce
2 (9 oz) cans crushed pineapple - drained
1 cup pecans chopped
2 cups whipped cream

Blend cream cheese, mayonnaise, sugar. Add fruit and nuts, fold into whipped cream. Pour in two loaf pans, cover with plastic, and freeze 6 hours. Thaw 15 mins before serving.

Jefferson Davis Pie
I've eaten this at Luby's cafeteria - I THINK this is the recipe, I HOPE so - but many Jeff Davis recipes do not have raisins and pecans, which Luby's pie does have. I finally found this one that does have raisins - so I'm hoping it tastes the same!

1 baked pie shell
1/2 cup butter
2 cups light brown sugar
4 egg yolks
2 T flour
1 t. cinnamon
1/2 t. allspice
1 t. nutmeg
1 cup cream or evaporated milk
1/2 cup dates - chopped
1/2 cup raisins
1/2 cup pecans - broken into small pieces

Preheat oven to 325. Cream together butter and brown sugar. Beat in 4 eggs yolks. Mix togetehr flour and spices. Stir in cream, dates, raisins, and nuts. Bake till set, about 30 mins. It calls for a meringue top, but Luby's doesn't have meringue, and I don't like it.

It just the 3 of us on Christmas day so we just fix whatever we're in the mood for. I think this year we're Mexican food.

Janet, we were going to do Mexican too - but the guys had such looooong faces when we talked about it that we decided to do more traditional but all new recipes. Hopefully, we'll find some new "must haves"! :)

As you know, I don't like cooking, but really enjoy fixing all the trimmings at Thanksgiving. I just don't want to do it again with the 3 of us. I'm afraid to say I've gained more weight and now weigh more than I ever have. I just don't need all the trimmings for Christmas, I would eat till I couldn't eat no more.

I'm going to Jessie's, and she is defrosting her turkey. It's just the 6 of us, so I hope she doesn't go crazy cooking.
