Sooooo easy!

Skin a whole chicken (well, that part wasn't easy!)

Plop skinned chicken into a crockpot

Cut up a lemon in wedges and put inside chicken cavity.
Cut up another lemon into slices and cover the chicken with lemon slices
Throw some peeled garlic cloves into the chicken cavity and toss some around the chicken.
You can also lay some fresh rosemary sprigs on the chicken, but it would be good without the rosemary.

Do not add any water. Cook on low for 8-10 hours.

This chicken was fall-off-the-bones tender and VERY flavorful! We ate about 1/2 of it and then I used the rest in some recipes that called for cooked chicken.

Thanks! I can cook, I just don't like to very much - I don't like to clean up the mess  I'm trying to eat better though, healthier actually, and I'm trying to lose 10 lbs by eating healthier, rather than trying to "diet", although I always count WW points in my head. It's an easy way to keep track of how much I am eating.

That does sound yummy. For some crazy and unknown reason, I don't eat chicken on the bone, but if it's falling off I could try it!

I don't like to cook, but I did cook last night and actually brought leftovers for lunch. I eat from the cafeteria in my building at least four days a week and am sick of it - chicken salad sandwiches and green salads.

That sounds so good and so easy Gayle! I may try that out when I visit my parents again. I love cooking when I go home because there's more people to feed, and I don't have to deal with eating leftovers for a week ;)
Sandy, I know another girl who won't eat chicken off the bone either. I guess you're not that crazy :)

I love chicken so I may try this. I really don't like cooking, but do sometimes. Trying to be a good mom and give this boy of mine some good nutrition.

lol I read this recipe to my mom on the phone last night. I told her I'll make it as soon as I go home again. It's now my motivation to go visit my parents soon :D

Now the pressure is on - EVERYONE is going to fix this chicken, and if it is not good, you all will be MAD at me

Here's the website where I got the recipe: A Year of Crock Potting http://crockpot365.blogspot.com/2008/05/lemon-and-herb-crockpot-roasted-chicken.html

I'm going home tomorrow night and I'm planning to make the chicken on Saturday :) My mom is buying the ingredients for me! She was concerned that the chicken will taste TOO lemony but I told her I think the garlic will offset some of the lemon taste. Is that right?

lol I haven't been able to stop thinking about it! I have to go buy some rosemary tonight since my small town doesn't carry anything like that

I love a strong lemony taste, but if you don't you might cut back on the lemon or put the lemon on top of the rosemary, so that all the lemon doesn't touch the chicken. Yes, I think both the rosemary and garlic "cut" the lemon taste

How do you think I could do this without a crockpot? It really sounds delicious.

I think you could just do it in the oven - but it might not be quite as juicy.

I think it would dry out, don't you? I have to find out what kind of cooking is going on inside the crock pot, and then see if I can duplicate it. Or..I can buy a crockpot.

You were right Gayle. I can do it in the oven.

Crock Pot/slow cookers use moist heat. Because the pot is kept closed and there is water/liquid in the pot, physics won't allow the temperature inside the pot to rise above the boiling point of the liquid, so you can put everything your recipe calls (http://www.answerbag.com/q_view/37148#) for into the cooker, turn the thing on, and forget about it all day. The long cooking times also mean that you dont have to worry about taking it out at a specific time (a little extra time won't make much of a difference). Of course, you could do the same thing in your oven by putting meat in a cooker, covering it, setting the temperature low and leaving it in all day, but a crock pot is much more effecient/easier.

I might have to add a liquid. What do you think?

I think I would put it in an oven bag when doing it in the oven. Then I think it would be about the same as the crockpot. I don't think you use any water in oven bags, but I"m not sure.

Glad to hear this Diana - it's so easy!! Well, except for pulling off the skin before cooking. I just love things I can pop into the crockpot and forget till it's time to eat. I'm a lazy cook!

Okay, it tired cooking this in the oven, at 350F for 1-1/2 hours. It cooked fine, and was very good, however, not as flavorful as expected. I used the fresh rosemary which is an herb that I really love. I cooked it a Pampered Chef clay roster with a clay lid. The clay held the moisture in, so the chicken definitely wasn't dry at all.

I think the problem was that the short cooking time did not allow for the flavors to really penetrate the meat. Doing this in a crock pot would have yeilded a much better result. Next time, it's the slow cooker!!!

Another thing I thought of doing is to try blending lemon juice, minced garlic and rosemary and using it as an overnight maranade for skinless chicken breasts & grilling them the next day. I may try this as well. They have a rosemary lemon chicken breast at Johnny Carinos that is pretty good.
