Soup
Now that the weather is cooling off a bit, I'll be thinking about soup! I love soup. I fix a batch and eat on it for several days. I take it to school for lunch, it is so easy to just pop in the microwave.
Do any of you have a favorite soup recipe? I have a few and will post them later. |
I eat soup 3 or 4 times a week! I make a potato soup with the sides you put on a baked potato that's probably my favorite. Harold makes a chicken tortilla soup that's yummy and probably my second choice. We don't really use a recipe, just make our own. There's an Italian cafe (Piazza) just outside my office building that has the best Tomato Basil.
I'm ready for homemade chili and enchiladas. For some weird reason, I only want chili when it's cool outside. |

I have a friend that makes the best potato soup. I really need to get her recipe because I just love it!! I'm not a big chili eater...got sick once on chili....not a good thing...lol.
I do like tomato soup and creme of broccolli. I should really look up some recipes for soup. Don't know if it's considered a soup, but I love beef stew in the winter time with homemade bread. |

I love beef stew too! When I make roast, potatoes, carrots and onions, I save the leftovers, gravy included, cut everything up, throw in a can of V-8 juice and voila! you have beef stew and it is very very GOOD.
I like homemade bread with this, but cornbread is good too! |
I make stew out of anything I cook :D When I'm cooking for just myself there's always leftovers, so if I roast a chicken or a beef roast or bison roast, I will make sandwiches for a few days and then cut up the rest and throw it in the slow cooker with some veggies and spices!
My mom makes delicious hamburger soup but I've never tried to make it. I always have enough in my freezer from her! |

My potato soup is really really simple. I cut up an onion and as much potato as I want and throw in the pan. I put in enough water to cover and boil till the potatoes are tender. I drain most of the water, but not quite all (for flavor). I fry a piece or two of bacon, cut it up and throw it and the grease into the potato pan. Next I add milk - 2% if I'm feeling fat, and whole milk if I'm not - or maybe even throw in a dollop of sour cream if I'm feeling very skinny. I like lots of potatoes in my soup so I only add enough milk to make it very potatoey. I heat till hot and bubbly around the edges, but do not boil the milk. Add salt/pepper to taste.
That's it. I put it in a bowl and sometimes add a tiny dollop of butter and then I break up toast into the soup and enjoy! Sounds kinda gross, but I grew up on this soup and I love it. |

Y'all are making me hungry!! Just the THOUGHT of cooler weather makes me want soup and chili. I only cook it in winter, too. Kinda crazy, considering we all have air conditioning here. lol!

I made buffalo meat sliders and potato soup for supper. Harold's not a soup slurper, but Laura and the g-kids loved it. I sliced cucumbers, and red and yellow bell peppers instead of fries!

i make a pretty mean veggie soup if i say so my self and a pretty good chili, it nice and cool today i wish i had the stuff to make either one of them, gona have to go to the store.
i love potatoe soup but it dosen't love me, lactose intolerant here :o my mom use to make oyster soup when i was younger and although i am not crazy about the oysters i loved the soup with the little oyster crackers. :D |
Hamburger Soup
3 lbs ground beef 2 onions chopped 796mL diced tomato 2 envelopes (~2tbsp) beef bouillon 2 cups chopped celery 2 cups sliced carrots 1/2 cup barley 1 tsp thyme (optional... my mom doesn't use it) 2 tbsp parsley 4 bay leaves 2-3 cans tomato soup Brown ground beef. Add all other ingredients with enough water to more than cover it all (barley will soak up a lot). Bring to a boil, and then cook on low for about 3 hours. |

Buffalo meat sliders are bison meat ground into little patties on little rolls - tiny burgers - don't know why they're called sliders.

I had a yummy split pea soup for lunch yesterday from the cafe in my office building. It's not one of my favorites, but it was good a dreary first day of Autumn.

This is a great stew in the New Mexico tradition of cooking with green chiles. You can get green chiles in the canned goods section of the grocery store - they are usually the tiny little cans that are near the salsa. Some of you will be able to find the frozen Bueno green chiles.
Green Chile Stew Oil 2 lbs of chicken - chopped 2 medium potatoes, diced 1/2 onion 2 cloves garlic - chopped 1/2 tsp cumin 4-6 cups water - can use 1/2 chicken broth 18 oz. chopped green chiles - use mild or hot, whichever you prefer 1 tsp salt pepper to taste Heat oil in dutch oven. Add chicken, potato and onion. Brown slightly. Add garlic and cumin and stir for one minute. Then add water/chicken broth. Bring to a boil. Add chiles and reduce to simmer. Simmer about an hour, longer if you want. It will taste better the next day. Serve with corn tortillas on the side. |
I prefer beef or hamburger in my chili - but this is a lower fat alternative that is pretty good.
Chicken Chili 12 oz. boned/skinned chicken breasts diced 1 envelope chili seasoning 1 quart canned tomatoes 15 canned corn, undrained 15 oz canned kidney beans, drained 1 green pepper and 1 onion chopped 1/2 cup salsa Sear chicken in non stick spray. Add to crockpot with remaining ingredients. Cook on low for 6-8 hours. |
This is a very rich, but very GOOD soup!!!
Tomato Basil Soup 4 cups of fresh tomatoes, cored, peeled and chopped or crushed canned tomatoes 4 cups tomato juice 12-14 fresh basil leaves 1 cup heavy cream 1/4 lb butter salt and pepper to taste Combine tomatoes and juice in pot and simmer for 30 mins. Puree tomatoes with basil leaves. Add cream and butter. Heat through. Serve with crusty french bread. |

That Tomato Basil soup sounds really good Gayle. I think there are fat free substitutes for the cream. We're at the end of tomatoes, so I have to pick up a bunch.
I used to make chicken soup with big, chunky pasta noodles. Yummy. That's an easy soup. Onion, celery, carrots, salt, pepper, fresh parsley, dill, a couple of parsnips chopped, a turnip, a chicken, cut into pieces, and garlic if you want it. Here's a cookbook recipe. It serves 8.

This soup is delicious. I omit the avacado, not a huge fan of it. This recipe is by Rachel Ray, I make it several times in the fall and winter.
Chicken Fajita Tortilla Soup 2 tblsp. extra virgin olive oil 11/2 to 2 lbs chicken tenders 1 tblsp. coriander, a palm full 2 tblsp. chopped fresh thyme leaves, 5 to 6 sprigs salt and pepper 1 large onion, quartered and thinly sliced 1 large bell pepper, quartered and thinly sliced 1 jalapeno, seeded and thinly sliced 1 (28 oz.) can fire roasted diced tomatoes 1 quart chicken stock 1 bag white corn tortilla chips 1 cup shredded pepper jack or white cheddar cheese 1 ripe avacado, diced 1 lime, juiced 4 scallions, chopped Handful of fresh cilantro leaves or parsley, chopped Heat a large skillet with extra virgin olive oil, over medium heat. Add chicken, brown 4 min. Add coriander, thyme, salt and pepper, to taste, add onions, bell pepper and jalapeno. Cook 8 to 10 min. Add tomatoes and stock, heat through. While the soup is cooking, lightly crush some tortilla chips, a couple of handfuls per bowl. Top the chips with cheese. Toss the avacado with the lime juice, scallions and cilantro or parsley. |
