Veggie Empanadas

Soy beef crumbles imitation
Potatoes
onions
cabbage
carrots
homemade salsa

pastry

flour
water
vegan butter
salt to taste

I'm bad at measuring so sorry about no measuring.

I twisted Gayles recipe a little because I needed to get rid of some veggies. And of course because I'm vegan this month.

Yum Yum! I'm going to have to try these recipes, Jessica!

Looks good! How's the diet going?

JJJ 03-06-2012 02:54 PM

Diana, so far I've been eating well with no animal products. I want to keep it up and hopefully move to raw diet pretty soon. Raw diet will only be temporary but hopefully all these yummy recipes stray me away from meat. I've seen to much animal cruelty in the food industry to want to be an omnivorous again.

Keep in mind, Jessica, that what you see on TV is the worst of the worst. Not every animal is treated in the ways that you see. The same is for the puppy mills. Most of them aren't what you see on TV.

Glen's aunt raised puppies to sell and had such a nice set up.....even built new kennels and a place for the mother's to have their babies......but when all of this came out about the puppy mills......nobody would buy her puppies and she had to get out. It was a shame.

Diana's right Jessica. There are some pretty bad places for animals to be, but not all of them are like that. I do remember one time when I was working at Frito that I was eating a veal sandwich. It tasted so good and then I started thinking...."what the heck is veal? I just saw something about that" then I remembered. I saw a documentary a couple nights before and it showed baby cows in these tight little quarters where they couldn't hardly move or lay down. I prompty got up, went to the bathroom and emptied my stomach.

I can still eat other meat, but can't even stand the thought of eating veal.

JJJ 03-07-2012 08:29 PM

Janet, veal is one thing I cannot stomach either.

Thank you Diana, I do believe you are right. But it's hard to know where the meat comes in your plate.

I still buy eggs, dairy and a few meats for my growing boys.

Ladies, I can't eat veal either.
