Pan Seared Tilapia Fish With Mojo
 
With changing to a healthier eating lifestyle I am digging out my recipes that are tasty and healthy. I thought Id share this yummy fish recipe with you all if you are interested.

Pan-Seared Tilapia with Mojo...
serves 4
cooking time 12 minutes

1 Tbsp. olive oil, divided
4 garlic cloves, thinly sliced
1/4 cup water
3 Tbsp. fresh lime juice
1 1/2 tsp ground cumin, divided
3/4 tsp salt, divided
3 Tbsp. all-purpose flour
3/4 tsp ground red pepper
Olive oil (or regular) cooking spray
4 tilapia fillets or other mild white fish
4 lime slices

Preheat oven to 400 degrees.

Heat 2 tsp oil in a small saucepan oer medium-high heat. Add garlic, saute 2 min's. Stir in water, lime juice, 1/2 tsp cumin, and 1/4 tsp salt. Simmer 1 min. Remove from heat and set aside.

Combine 1 tsp cumin, 1/2 tsp salt, flour, and red pepper in a shallow dish. Lightly coat fillets w/ cooking spray; dredge in flour mixture.

Heat 1 tsp. oil in a large oen proof skillet coated w/ cooking spray over med-high heat. Add fillets; cook 2 min's on each side or until lightly browned. Remove from heat. Spoon lime mixture evenly over filletes; transfer skillet to oven and bake 5 min's or until fish flakes easily when tested w/ a fork. Serve fish w/ lime lsices on top.

Sounds good Sheryl, I will try your way the next time I make it. If you like Tiliapia fish I put a receipe for it in the other section of diet thread in the Health and Beauty, check it out!

I will check out the recipe you posted, missed it thanks! I do enjoy Tilapia since it's a very mild fish. :p
