What's for Dinner?
 
Tonight, hubby and I decided to be a little crazy so we made up our own dish. It was black beans and rice (our own style!) with broccoli on the side. It turned out well and we really enjoyed it. I love cooking with him! :)

So what did everyone else have for dinner?

Being I am on Jenny Craig, I had their chicken fettuchini with my salad. I try to make sure I get all my vegie's so my salad was filled with Romaine lettuce, radishes, broccoli, pea pods, carrots, tomatoe, cucumber, yellow bell pepper, green onion. Diet dressing of course splashed w/ Chinese salad vinegar. YUMMY. Oh, and one glass of wine. (how I wish wine had NO calories :( )

My husband had a Lean Quisene dish with the same salad.

I haven't cooked for days on end now, LOL. The microwave is sure getting used lately though. :p

Tonight being it is Lent and I don't eat meat, I made a delicous salmon with lemon juice, fresh basil seasoned with lemon pepper, put garlic slices in the salmon, some fat free margarine and sprinkled with breadcrumbs wrapped in alumiumun foil and baked for about 20 minutes it was yummy, I also made shrimp oreganta and salad on the side.. It was a pretty healthy dinner.

Oh yum! That salmon sounds delicious! I am going to have to remember this recipe when I begin cooking again after Jenny Craig maintence starts. I am a HUGE fan of Salmon! :goldfish:

That sounds amazing!! My hubby used to be a vegetarian as well...until I told him I couldn't cook anything for him if he didn't eat meat. Now he eats turkey and chicken. :)

Okay Gina...detail the recipe for the salmon. I love salmon and now can't find my recipe for the seasoning I like. Yours sound wonderful. Will you share it with me???

Last night, we had bean chaloupas, beef and chicken crispy tacos, chili con queso tostada and guacamole. I did not cook. We went to Siesta Restaurant. It's close to our home, just good old fashioned Mexican food, and you can get in on Friday evening without a wait. I cleaned and washed clothes last night instead of cooking so I can enjoy my spa experience today.

This evening i made, mashed potatos, those big mushrooms fried with garlic, fried onions, potato salad, salmon for the boys.
I dont eat fish/meat or chicken.:p

YUM!! I will be having yet AGAIN Jenny Craig meal. All this suffering surely is going to pay off right? :p

Ahhhh those are my kind of meals, pop in the microwave, and BON APETIT :yelrotflmao: No mess, no fuss... and ya lose weight! HAH, someone needs to come up with that in this place :D
