Baked fish
 
I found a good recipe for baked fish tonight. We brought back 40 lbs of halibut from Alaska this summer, so if you have any good baked fish recipes, please share!

1 1/2 lbs mild fish
1/2 cup mayonnaise (I used Miracle Whip Lite)
1/2 cup sour cream or plain yogurt (I used plain non-fat yogurt)
1 1/2 teaspoon fresh lemon juice
1 egg white stiffly beaten
1/4 cup chopped green onion (I didn't use onion)
1/4 cup sliced almonds
flour or seasoned bread crumbs

Preheat oven to 400.
Dip fillets that have been patted dry in flour or bread crumbs. Place in shallow baking dish. Combine mayonnaise with lemon juice. Add sour cream (or yogurt) and blend well. Gently fold in beaten egg white. Sprinkle fish with green onion. Spoon mayo mix over top, then sprinkle with almonds. Bake 20-25 minutes (depending on thickness of fish) until fish flakes easily.

This recipe turned out GREAT and was VERY tasty and very low calorie since I used light miracle whip and non-fat yogurt.

It WAS incredibly easy to make! I steamed some asparagus and yellow squash. I was very easy and quite delicious!

You asked for other fish recipes. I take fish and season it with salt and pepper, add a bit of butter and lemon juice. Wrap it up in foil and either bake it or place it on the grill. Fish is suppose to be cooked at a really high temperature for a short amount of time. It's very simple but good. (We use catfish)

Thanks Diana! We have lots of catfish in the freezer so I'll try that one. No one ever told me about high heat for a short time - maybe that is the trick!!!

I hate fish, but I do like halibut. It seems to have a less fishy taste to it, and it's sooo good in a batter. I have family in the yukon, so they bring down a lot of fish for us. I think I got sick of fish because when I was little we lived in northern saskatchewan and ate fish constantly. I'd be out fishing all summer, and ice fishing in the winter when I was 2 years old lol. I had so much of it I just can't even stand the taste of anything fishy anymore.
I will pass this recipe on to my mom, she's still a big fish lover :)

You are welcome, Nina - and if you have any good fish recipes, let me know. We have a freezer full of halibut and I try to fix it once or twice a week!
