Ice Cream Cake!

We just had a birthday in the office last week and one of my coworkers made cake for everyone. It was ice cream cake, but it had chocolate in it, and when she told us how she made it I thought, why didn't anyone think of that before?

She lined a pan with ice cream sandwiches... then put a layer of Cool Whip on it, then another layer of ice cream sandwiches, another layer of Cool Whip, and topped with chocolate and caramel sauce, and put it in the freezer until we were ready to eat. It's so easy! And it was soooooo good!

Yummy!!! Great recipes!

My friend taught me this one:

Put ice cream (melted enough to work with), into a pie crust. You can buy one, make one, any size, etc. Put it in the freezer to re-harden. Cover with Chocolate Hard Shell, and then top with whatever you want. Sprinkles, chocolate chips, strawbrries, whipped cream, turkey..use your imagination. I also like to use a fudge ice cream so that the chocolate goes through the pie. Freeze until it's time to serve.

There's a new Cold Stone Creamery that moved into Scott's office building and he was telling me about their ice cream pies! That sounds so good. We're getting either a pie or a cake from there tonight for my dad's birthday :D
