I found my mom's recipe for mincemeat cookies. She used to make these just for me, and I found where she had written the recipe inside the cover of one of her cook books. When I stopped crying, I baked cookies
I can't believe she's been gone almost 4 years. She was my very best friend. Anyway...the cookies are good
* 1 cup butter, softened
* 1 1/2 cups sugar
* 3 eggs
* 1 jar prepared mincemeat pie filling
* 3 1/2 cups all-purpose flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1 teaspoon ground cinnamon
* 1/4 teaspoon salt
* 1 cup chopped pecans
In a large mixing bowl, cream butter and sugar. Beat in the eggs. Add mincemeat; mix well. Combine the flour, baking powder, baking soda, cinnamon and salt; add to the creamed mixture and mix well. Stir in pecans. Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350 degrees F for 14-16 minutes or until edges begin to brown. Remove to wire racks to cool.
