Combine first 9 ingredients; shape into two 7 1/2 x 4" loaves. Place on a lightly greased rack of a broiler pan; bake at 350 degrees for 40 minutes. Combine 1/2 cup catsup, 1 tablespoon horseradish & remaining ingredients; spoon over meatloaf & bake an additional 5 min. Yields 2 loaves. NOTE May freeze the second loaf. Notes:

I have a recipe I copied from Emeril Lagasse for meatloaf but it's really really long. I've made it once and it's WONDERFUL.
"Emeril's Most Kicked-UP Meatloaf Ever"

2 TBsp butter
1 lrg onion, chopped
1 rib celery, finely chopped
1/2 red bell pepper, finely chopped
2 tsps minced garlic, plus 1 tsp
1 tsp chopped thyme leaves
1 tsp chopped rosemary
1/3 cup chopped fresh parsley
2 eggs
1 1/2 tsp dijon mustard
1/2 cup ketchup, plus 1/4 cup
2 TBSP plus 1 tsp worchestershire sauce
1/2 cup heavy cream
2/3 breadcrumbs
1 lb ground chuck
1/2 lb pork sausage (such as breakfast sausage)
1/2 lb ground veal (i didnt use this because i couldn't find it)
1 1/2 tsp salt
2 tsp plus 1/4 tsp freshly ground black pepper
4 slices bacon, cut in half
2 TBSP white or red wine vinegar
1/2 cup canned tomoatoes, chopped or crushed

heat butter over med heat till melted. Add all but 1/4 cup of onions, celery, and all but 2 tablespoons bell pepper. cook about 6 min's. Add 2 tsps of the garlic, the thyme, rosemary, and parsley. cook for 2 min's. remove from heat and allow to cool.
Preheat oven to 350 degree's.
Transfer vegi mixture when cooled to a mixing bowl and add the eggs, mustard, 1/4 cup of the ketchup, 1 tsp of worchestershire sauce, and heavy cream. Mix/combine. Add the breadcrumbs and the meat, 1 tsp of the salt, 1/4 tsp of the pepper and mix. Do NOT overmix. Transfer to a 9x5x3 inch loaf pan and form the meat into pan. arrange the bacon on top of the meatloaf. Set aside.
In a small saucepan, combine the remaining 1/4 cup onion, red bell pepper, garlic, ketchup, worchestershire sauce, and canned tomatoes. bring to a boil and cook until thickened, about 5 min's.
Pour the sauce over the uncooked meatloaf and bake for an hour. Or until meat is done and bacon is carmalized. Remove from over and cover w/ foil. Allow to rest for about 10 min's.
Serve w/ mac/cheese and green vegi. YUMMY!!
