I try to freeze as much of this type food as possible. It stay's fine in the freezer if sealed properly. We have a FoodSaver vacuum sealer that works great for all kinds of foods. You can keep flour, cornmeal, and mixes for years in the freezer if sealed. Also, you can use them frozen in most recipes and it doesn't make any difference. We have a lot of mold issues in the humid south, not to mention weevles.
BTW, Sheryl, thanks for the warning. I knew mold could make these foods taste bad, but had no idea they could b so hazardous.
