I know it doesn't sound as good as it tastes, but you'll be surprised...
Along with the garlic, chili powder, cumin and other usual spices.... add a little pinch of cinnamon and cocoa (dark bakers chocolate powder). Not a lot. Just enough to bring a rich undercurrent to the sauce.
I worked in catering for years, so I have tons of recipes, but it seems like I got that idea from the book Like Water for Chocolate.
