Baked Brisket In Wine Sauce

About 9 years ago when my hubby and I were just dating he made me this special dinner. The meal was fabulous and beautiful. Now that we are married, once a year I make it for him on his Birthday.

Well, tomorrow I will be making the brisket and wanted to share the recipie with you ladies. It's so easy to make, beautiful presentation, and it makes your home smell sooooo good.


Brisket Baked In Wine Sauce

Fresh beef brisket, about 4 pound center cut
3-4 medium size onions, cut into 1/2 inch thick slices
1 1/2 cups dry red wine, such as Zinfandel or Merlot
1/4 cup each firmly packed brown sugar and red wine vinegar
2 TBSP soy sauce
2 TBSP paprika
3 large cloves garlic, minced or pressed
1 TBSP each cornstarch and water (optional)
chopped parsley

Trim off excess fat and lay brisket in a rectangular or oval pan. (about 8 x 15 inches). Bake, uncovered in a 450 degree oven until top browns lightly, about 15 - 20 minutes. Turn meat over and bake until top browns, about 15 minutes more. Remove from oven, reduce oven temp to 325 degrees.

Arrange onion slices, overlapping, on top of brisket. Combine wine, sugar, vinegar, soy sauce, paprika, and garlic. Pour over meat. Cover VERY tightly with foil. Bake until meat is very tender when pierced, 3 1/2 hours.

To thicken juices, transfer to a 1 inch quart pan. Cover meat and keep hot. Mix cornstarch and water and stir into juices. Boil over high heat, stirring, until thickened. Serve from a small dish, or pour over meat and onions. Sprinkle meat with parsley.

I serve this with mashed potatoes and a salad.

Oooops! I just noticed after posting this in the health/diet section that we now have a recipe section as I requested.
