Yummy meatloaf recipe?

Does anyone have a really good meatloaf recipe to share?
I've been hungry for it lately, but want to try something new.

I know that my Mom when she used to make meatloaf she mixed Heinz 57 sauce and ketchup (about equal amounts) and put it on top. It was really good and added a different flavor.

I make meatballs more now than I do meatloaf. I use the same recipe for both but mix BBQ sauce and brown sugar and put it on a few minutes before they're done. It's one of my family's favorite recipes. It's not anything fancy, but we love it!

To make meatloaf or meatballs I take----

1 to 1 1/2 lb. of hamburger
1/2 chopped onion (or you can use dried onion)
1 pkg saltine crackers (1/4 of a box)
2 eggs

Just mix this all together and form into meatloaf or meatballs. For the meatloaf add the topping to it when you first put it in the oven not at the end. For the meatballs add the topping about 10 minutes before they're done. Bake at 350* for an hour.

Here is my recipe

I use ground turkey...I haven't eaten red meat or pork for over 13 yrs. You can use ground beef instead if you want.

1 pkg ground turkey (or beef)
1 egg
about 1 1/2 cups of bread crumbs or crushed up stove top stuffing
onions (optional)
onion powder
garlic powder
1 pkg litpton GOLDEN onion soup mix
mix all ingredients together and put in pan.cover with tin foil..I cook at 350 for about 45 mins to an hour...I check it before I take it out of the oven to make sure it's done. I serve it with turkey gravy...if you are using ground beef you could use a mushroom gravy, onion gravy or brown gravy.

It comes out different everytime but, this is the recipe that I use most often..I used to make it with tomato soup but hubby likes it better this way...As you can see I don't have alot of measurements..I don't measure anything..I've been making it so long I don't have to! LOL I have even used dry ranch dressing instead of the onion soup mix...gives it a little different taste.

let us know how yours came out!

This sounds great! I am a huge fan of Horseradish!! YUMMY

I have a recipe I copied from Emeril Lagasse for meatloaf but it's really really long. I've made it once and it's WONDERFUL.

"Emeril's Most Kicked-UP Meatloaf Ever"

Ingr's...

2 TBsp butter
1 lrg onion, chopped
1 rib celery, finely chopped
1/2 red bell pepper, finely chopped
2 tsps minced garlic, plus 1 tsp
1 tsp chopped thyme leaves
1 tsp chopped rosemary
1/3 cup chopped fresh parsley
2 eggs
1 1/2 tsp dijon mustard
1/2 cup ketchup, plus 1/4 cup
2 TBSP plus 1 tsp worchestershire sauce
1/2 cup heavy cream
2/3 breadcrumbs
1 lb ground chuck
1/2 lb pork sausage (such as breakfast sausage)
1/2 lb ground veal (i didnt use this because i couldn't find it)
1 1/2 tsp salt
2 tsp plus 1/4 tsp freshly ground black pepper
4 slices bacon, cut in half
2 TBSP white or red wine vinegar
1/2 cup canned tomoatoes, chopped or crushed

dir's...

heat butter over med heat till melted. Add all but 1/4 cup of onions, celery, and all but 2 tablespoons bell pepper. cook about 6 min's. Add 2 tsps of the garlic, the thyme, rosemary, and parsley. cook for 2 min's. remove from heat and allow to cool.

Preheat oven to 350 degree's.

Transfer vegi mixture when cooled to a mixing bowl and add the eggs, mustard, 1/4 cup of the ketchup, 1 tsp of worchestershire sauce, and heavy cream. Mix/combine. Add the breadcrumbs and the meat, 1 tsp of the salt, 1/4 tsp of the pepper and mix. Do NOT overmix. Transfer to a 9x5x3 inch loaf pan and form the meat into pan. arrange the bacon on top of the meatloaf. Set aside.

In a small saucepan, combine the remaining 1/4 cup onion, red bell pepper, garlic, ketchup, worchestershire sauce, and canned tomatoes. bring to a boil and cook until thickened, about 5 min's.

Pour the sauce over the uncooked meatloaf and bake for an hour. Or until meat is done and bacon is carmalized. Remove from over and cover w/ foil. Allow to rest for about 10 min's.

Serve w/ mac/cheese and green vegi. YUMMY!!

Boy you guys go all out for your meatloaf. Since I hate to cook....I just use a lb hamburger, 1/2 package of crackers, some ketchup, Liipton onion soup mix, couple of eggs and smush it all together into a loaf and bake it. Nothing fancy, never measure the ingredients, but it always tastes good.
