Rainbow Pepper Salad

Starting Jenny Craig Weight Loss last week I receive free recipe's on my meal planning sheets.

This one sounds good and Id like to make it. I thought Id share it with you all.



Rainbow Pepper Salad

1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
1/4 cup yellow bell pepper, chopped
1/4 cup red cabbage, chopped
2 Tbsp. green onion, diced (now why didn't they just say chopped? LOL)
1/8 tsp crushed basil
1/8 tsp. minced garlic
1 Tbsp. white wine vinegar
1/2 tsp olive oil

Toss all the ingr's in a mixing bowl. Chill for 1-3 hours and serve.

Yummyyyyyyyyyyy that sounds lovely Sheryl, i will try it! Thanks for sharing I love salads, specially in summer!

I make this salad but I use more vinegar and water - about 1/2 and 1/2 each and I add splenda - so it is sorta sweet/sour. It's one of my favorite salads.

Oh I am glad it's good. I can't wait to try it. Id like to add some cucumbers to it also. I am guessing by adding a few cucumber chunks that it wouldn't be adding anymore calories to it really .
