Baked Potatoe Soup
I'm making this right now for tonights supper and thought Id pass the recipe along incase any of you wanted it...
2/3 cup butter 2/3 cup all purpose flour 7 cups milk 3-4 large baking potatoes, baked, cooled, peeled, cubed. (appx 4 cups total) a bunch of green onions, sliced one package bacon, cooked and crumbled 2 cups shredded cheddar cheese 1 cup sour cream (8 oz) salt/pepper to taste In a large soup kettle or dutch oven, melt butter. Stir in flour, heat and stir until smooth. GRADUALLY add milk, stirring CONSTANTLY until thickened. Add the potatoes and onions. I smash up the potatoes somewhat but you can leave them chunky if you'd like. Bring mixture to a boil and stir constantly. Reduce heat, simmer 10 minutes. Add remaining ingredients, stir until cheese is melted. Serve immediately. Optional - garnish soup w/ extra cheese, bacon and sliced green onion on top.

Sounds yummy!!!! I will try it out, without the bacon. Ya know i'm a veggie LOL

I love potato soup and this sounds great. Wish I had some of the ingredients here, but hey, once we are able to get to town, hopefully I make it this weekend.

Sounds awesome & really delicious, but how many calories per tsp do you think??? It must be really rich with all the butter, milk, bacon, cheese and cream. WOW.

My aunt (who lives your way in West Fork) has talked about a potato soup like this that is really good. I'm going to have to try this. It sounds yummy and I love potato soupl

Told hubby about this. He'd like to try it, too, because it sounds sooo good, but just a tad rich. Y'all enjoy!!! Now that I know what is in potato soup, I'll be afraid to order it in a restaurant.

2 cups = 1 pint 4 cups = 1 quart I'm trying to come up with a unit of measure you can relate to, Highlans. And yes, you could cut the calories, but I'll wager the taste would be cut as well. What a shame!!
