Baked Potatoe Soup

I'm making this right now for tonights supper and thought Id pass the recipe along incase any of you wanted it...

2/3 cup butter
2/3 cup all purpose flour
7 cups milk
3-4 large baking potatoes, baked, cooled, peeled, cubed. (appx 4 cups total)
a bunch of green onions, sliced
one package bacon, cooked and crumbled
2 cups shredded cheddar cheese
1 cup sour cream (8 oz)
salt/pepper to taste

In a large soup kettle or dutch oven, melt butter. Stir in flour, heat and stir until smooth. GRADUALLY add milk, stirring CONSTANTLY until thickened. Add the potatoes and onions. I smash up the potatoes somewhat but you can leave them chunky if you'd like.

Bring mixture to a boil and stir constantly. Reduce heat, simmer 10 minutes. Add remaining ingredients, stir until cheese is melted. Serve immediately.

Optional - garnish soup w/ extra cheese, bacon and sliced green onion on top.
