Tahini Salad - Great For The Warmer Days!
I've been on a search for good salads...I found a few and will post them here. I have not made this one yet, but it's on my list.
Original recipe yield: 4 servings PREP TIME 30 Min READY IN 1 Hr US METRIC SERVINGS About scaling and conversions INGREDIENTS 2 pickle-size Persian cucumbers, diced 1 large tomato, diced 3 radishes, diced (optional) 1 green onion, sliced 10 mint leaves, sliced 1/3 bunch parsley, chopped 1 clove garlic, minced 3/4 cup tahini 1/4 cup lemon juice 2 tablespoons olive oil Salt, to taste DIRECTIONS Combine the cucumber, tomato, and radish in a bowl with the green onion, mint, and parsley. In a small bowl, stir together the garlic, tahini, lemon juice, and olive oil until smooth; season to taste with salt. Toss the vegetables with the dressing until combined. Cover, and refrigerate for 30 minutes before serving. **Tahini is an oily paste made from ground sesame seeds. A sweetened dark variety also exists. It can be found in health food stores and the ethnic section of most grocery stores.** I read the reviews on this and it sounds like the dressing can be thicker/pastier. But it says to keep tossing and the dressing eventually spreads out covering the salad. If not, possibly adding a little more liquid ingr's might help. To me a recipe is always open for change to suit each individual tastes/desires, etc. Hope it's good and I look forward to making it.

Maybe this year I will try it. I LOVE fresh herbs, and the one's in the grocery stores can tend to be expensive.

It was a lot of fun planting. I also planted iris & daisies yesterday. I've grown flowers before but this is my first time trying herbs. I just hope I don't kill them all =). I'll let you know how it turns out

My favorite is basil and oregano. If I grew like rosemary or mint I am not too sure what Id do with it. My Mom grows mint and she always told me to be careful w/ it because it takes over the garden. LOL.

I planted chamomile, sage, rosemary, parsely, mint, Basil, oregano, & Lavender. I did put the mint & lavendar in containers to keep them out of everything else =)
