Kate--Here's a new recipe that was given to me a while back. This is absolutely wonderful and very easy to make!!!
Bean Salsa Dip 1 can Blackeyed Peas 1 can Black Beans 1 can Red Beans 1 can Shoepeg Corn (or any can of corn will work--I think that shoepeg corn is smaller kernels) 1 green Pepper, finely chopped 1 red Pepper, finely chopped 1 Onion, finely chopped 1/4 to 1/2 bunch fresh Cilantro 1 large bottle of Zesty Italian Dressing Drain and rinse the beans. Then mix everything together. This makes a large amount. Serve with Frito Chips or tortilla chips. Yummy!!!!

That's a good one, too, Diana. Thanks. I will definitely add some chips with this dip to our platters. This is turning out to be a lot of fun, thanks to all of you!
I am busily writing about the Patriot Act and Public Admin, while jotting notes on the side about what groceries my dh will have to pick up for this food fest! |
