Beef Enchiladas

1 pd of beef
1 can of Wolf Chili No beans
2 pks of tortillas
1 cube of chicken flavored boullion

Cook the meat with 1 cube of Chicken flavored Boullion.... once it is browned drain it... grab your pack of tortillas and microwave them til warm and soft pre heat the chili as well... turn on oven to preheat at 350 and grab your baking pan and put a small layer of chili on the bottom. Once you tortillas are warm grab one and add some ground beef probaby about 2 tablespoons full ..add a bit of cheese and roll... continue to do this to the rest... while stacking next and on top of each other... once you are done rolling, grab the chili and pour it on top and add cheese.... put the foil paper to cover stick in the oven for 30 minutes and VOILA! Easy!!!

YUM!!!!!! That sounds DIVINE!!!!!!! I might have to try this recipe 2NITE!!!!! Seriously!

You can do "Flautas " too.....

Chicken shredded
Sour cream
Corn Tortillas
Season all

Grab your frying pan... add a cup of oil or EVOO heat up to med high heat... Grab your tortillas and warm up in microwave... once you have cooked and shredded your chicken start to roll your tortillas stuffed with chicken... you can use toothpicks to keep them together... add one rolled up tortilla into the oil bottom down so it wont come undone and roll it around in oil til crisp.... have a plate ready with a napkin to soak excess oil... once cooked.... plate them and add sour cream on top... VOILA!

I love mojitos too but my hubby says he can't stand the smell of fresh mint so i tell him to go to another room! girl my hubby made me a screwdriver with a cajun shot when we first met and OMG!!! i still blush when i think of the things i did after drinking that bad boy! i've never had sex on the beach but i have had a long island iced tea-whooeee!!! talk about knocking you on your ass! i'm trying to think of other unusual drinks i've had..hhhmmmmm...oh my hubby went to greece when he was in the navy and he told me they drink a lot of ouzo-girl it is strong but GOOD!!! i drink it after i've had a few other drinks to numb my tongue-makes you go cross-eyed...i haven't been able to drink more than two shots without getting drunk off my booty! i have had sambuca-tastes like strong black licorice....good though- i think i have a recipe for a mixe drink with it...hold on....Bailey's Roma-1 part Bailey's irish cream and 1 part sambuca-pour over ice and serve.

Guacamole Recipe to go with "FLAUTAS"

1 Hass LARGE Avocado (if they only have small ones use 2)
1/2 a medium tomato
1/2 White Onion
1 Lemon or Lime
Salt

Cut your avocado in half and scoop it unto a bowl.. Grab your onion and tomato and chop unto small pieces.. Micx into your already smashed avocado bowl mix together add salt to taste and squeeze a lemon or lime unto it..taste and you might add a bit more salt... (Lemon is used to avoid browning of the avocado and it gives it a nice twist)....good eats!

If you are doing Mexican. Corona or Pacifico are good. And I can't believe no none mentioned Magaritas. Yummmmmmmmmmm. Anyway, Just about any time alone can be romantic. By the way, you don't have to spend a ton of money for champagne. I love Chandon myself.

Well, I'm not much on mixed drinks unless it's a marguerita - Jose is my BEST friend Otherwise, I'm drinking either Miller Lite or Bud Select. I make my margueritas the following way:

1 can frozen Lime-ade
1/4 can tequilla (use CLEAR tequilla - gold is for sippin')
ice
1 - 2 tablespoons confectioners sugar

put in blender and crush away - really easy and simple and makes one blender full, or about 4 drinks depening on glass size you serve it in!!

I don't put salt on my glass as I don't like it but I do have salt for hubby and friends that want it.

me too.. IM A MARGARITA GIRL!!! BUT I like it over ice not frozen... lol... I know I tell my family all the time when they come over... Meet my 3 favorite men (Jose's..lol)

i make mine kind of the same way except i don't put sugar in there and i put a half of a cup of triple sec-have you tried that jose black tequila? been thinking about buying it but haven't heard any feedback

do we have any vodka drinkers out there? my favs are Vox, Grey Goose, and absolut -if it's flavored-and my hubby likes stoli too-i am buying the the blueberry stoli tomorrow it's finally in the albertson's-cheapest place to buy hard liquor.

Nope, haven't tried that. If I do, I'll definitely give you a report and if you try it, let me know. On the triple-sec, if I have it, I use it but if I don't, I really don't miss it. I use the sugar to "cut" some of the tartness of the drink. I prefer mine over ice when I'm at a restaurant but if I make them at home, I always make frozen - hmm - wonder why??? No rhyme or reason, just do. I'll have to try mine on the rocks next time I make some. Oh, and one of my all time fav songs - "Jose Cuervo, You Are A Friend of Mind" by, I think, Shelly West. Now I'm gonna be singing that tune in my head all day

Ooooooooooooo...I have THE BEST Margarita recipe EVER! It sounds strange, but it is seriously THE BEST!

2 cans of Minute Maid frozen limeade mix (I attached a pic bc I really didn't know how to explain this)

1 Corona beer

Sprite

Tequila

Mix together the minute maid, beer, and sprite and tequila to taste. Put in the freezer until frozen. It doesn't freeze all the way because of the alcohol, but it makes it all slushy and yummy! This is seriously THE BEST Margarita Recipe! YUMMY!

I've decided that I'm having a Mexican FEAST 2nite, thanks to Cindy's yummy recipes! I'm going to have those, gracamole, and homemade margaritas! YUMMY!
