Crockpot lemon chicken

Sooooo easy!

Skin a whole chicken (well, that part wasn't easy!)

Plop skinned chicken into a crockpot

Cut up a lemon in wedges and put inside chicken cavity.
Cut up another lemon into slices and cover the chicken with lemon slices
Throw some peeled garlic cloves into the chicken cavity and toss some around the chicken.
You can also lay some fresh rosemary sprigs on the chicken, but it would be good without the rosemary.

Do not add any water. Cook on low for 8-10 hours.

This chicken was fall-off-the-bones tender and VERY flavorful! We ate about 1/2 of it and then I used the rest in some recipes that called for cooked chicken.

Thanks! I can cook, I just don't like to very much - I don't like to clean up the mess I'm trying to eat better though, healthier actually, and I'm trying to lose 10 lbs by eating healthier, rather than trying to "diet", although I always count WW points in my head. It's an easy way to keep track of how much I am eating.

That does sound yummy. For some crazy and unknown reason, I don't eat chicken on the bone, but if it's falling off I could try it!

I don't like to cook, but I did cook last night and actually brought leftovers for lunch. I eat from the cafeteria in my building at least four days a week and am sick of it - chicken salad sandwiches and green salads.

That sounds so good and so easy Gayle! I may try that out when I visit my parents again. I love cooking when I go home because there's more people to feed, and I don't have to deal with eating leftovers for a week
Sandy, I know another girl who won't eat chicken off the bone either. I guess you're not that crazy

I love chicken so I may try this. I really don't like cooking, but do sometimes. Trying to be a good mom and give this boy of mine some good nutrition.

I'm going home tomorrow night and I'm planning to make the chicken on Saturday My mom is buying the ingredients for me! She was concerned that the chicken will taste TOO lemony but I told her I think the garlic will offset some of the lemon taste. Is that right?

I forgot all about this recipe. It just makes my mouth water so I'm going to have to try it!! Just gotta' remember to buy the ingredients at the grocery store.
