Avocado pesto pasta
So fresh, creamy and easy.
1 pound dried linguine 1 bunch basil leaves ½ cup pine nuts 2 ripe avocados 2 tablespoons fresh lemon juice (about ½ of a lemon) 3 cloves garlic ½ cup olive oil Salt to taste (I use sea salt) freshly ground black pepper to taste ¼ cup chopped sun dried tomatoes (optional, I haven't yet tried it this way) Cook pasta as you normally would, while it is cooking pit the avocados and scoop the meat out into your food processor, add the rest of your ingredients until creamy and smooth. Toss with the cooked, drained linguine. Serves 3-5 depending on if you are serving with fresh bread/garlic bread and doing a cooked veggie side or salads. Also goes great with a glass of wine, in my opinion |

Where in the world have you been girl???? Hope you're doing well!
Looks like a really good recipe. I'll have to try it when things slow down a bit.

Life has been keeping me busy but as you can see, I haven't forgotten about you gals
My youngest nephew (10 months-born premature) has had health concerns so I've been bouncing back and forth between here and MA. Just put one of my favorite aunts to rest out in the country. Helping my husbands grandmother out with appointments/grocery shopping and such several times a week as she recovered from knee surgery. Have a couple girlfriends pregnant around the same trimester so trying to figure out how I am going to go to all these long distance showers or if I am going to wait to meet the babies after they are born and things have calmed down a bit. Moving in new furniture, putting it together, moving the old out.. my sister and her 3 boys are leaving tomorrow to come visit for a week Our birthdays (Nov), Christmas and Valentine's Day were wonderful. The New Year started off pretty crappy though lol This recipe is so delicious Janet, I hope you get around to giving it a try! |

I'm sorry to hear about your aunt and hopefully your nephew comes out well from his health problems. |
