Roast with potatoes and onions and celery and carrots. Corn and homemade crescent rolls. Cookies for dessert. Raw veggies too.

My husband worked really late last night (still trying to get done with harvest) and my daughter went with another daughter to have a "sister's" day with another daughter at her house. So I was home alone until about 11:00, so I warmed up some soup that we had the day before. It was Chicken Tortilla Soup. It's really good. Here's the recipe--
Chicken Tortilla Soup 2 cans-10 oz. each chicken (or you can use cooked chicken breast or left-over turkey) 1 can Rotel (or 1 can of tomatoes and green chilis-same thing) 2 cans chicken broth 2 cans cream of chicken soup 4 oz. Velveeta 1 can corn (optional) Just put all of the ingredients in a pan on the stove or in a crockpot. Heat really good and let simmer for a while. I thickened mine with corn starch, but it's good if you don't thicken it. When you get ready to serve it, crumple tortilla chips in your bowl, like crackers, and mix with your soup.
