Along with the garlic, chili powder, cumin and other usual spices.... add a little pinch of cinnamon and cocoa (dark bakers chocolate powder). Not a lot. Just enough to bring a rich undercurrent to the sauce.

I worked in catering for years, so I have tons of recipes, but it seems like I got that idea from the book Like Water for Chocolate.
Cinnamon and cocoa are fabulous in chili recipes!

Here's my recipe for chili:

2 lb ground chuck
1 large onion chopped
1 large can diced tomatoes/ or 3 small cans
3 cans dark kidney beans (drained)
1 small can tomato paste
2 envelopes chili seasoning
2 tbsp chipotle seasoning
1 tsp cumin
salt & pepper to taste

brown the meat with the onion. Drain well. Add remaining ingredients. Bring to a rolling boil stirring constantly. Lower heat and simmer for at least an hour.
