Horseradish Meatloaf
2 pound Ground chuck or sirloin 3/4 cup Oatmeal 1 Oinion 1/2 cup of Catsup 1/4 cup of Milk 2 Eggs 1 tablespoon Horseradish 1 teaspoon Salt 1/4 teasponn Pepper 1/2 cup of Catsup 1 Tablespoon of Horseradish for glaze 3 tablespoon Brown sugar 2 teaspoon Mustard (prepared) or Dijion mustard Combine first 9 ingredients;shape into 2 7.5 x 4" loaves. Place on a lightly greased rack of a broiler pan;bake at 350 degrees for 40 min. Combine 1/2 cup of catsup, 1 tablespoon horseradish and remaining ingredients; spoon over meatloaf and bake an additional 5 min. I usually just make one big loaf instead of the 2. Then i usually cook it for a good hour or so. Put the topping on and just stick it back into the oven till the sauce has make a nice glaze. I have to admit that I thought it would be nasty with a sweet glaze but man was I wrong. It is really good and it is a nice change from the typical tomato sauce. I usually boil a few red potatoes to go with it or either I mash them. Makes for a good meal!
