good supper

As I mentioned in another thread a week or so ago, I've been watching my diet, counting weight watchers points and avoiding wheat/gluten. I made a good supper tonight, even my hubby liked it (I didn't tell him it was weight watchers recipe - he he)

WW Lowfat Taco Soup
1 lb ground turkey breast (I used 96/4 ground beef)
1 large onion chopped
1 (1 1/4 oz) package hidden valley ranch dressing mix (dry)
1 (1 1/4 oz) package taco seasoning mix
1 (15 oz) can pinto beans
1 (15 oz) can hot chili beans
1 (15 oz) whole kernel corn
1 (15 oz) rotel
1 (15 oz) can stewed tomatoes
(I also added a small can green chilies)

Brown meat and onions. Drain. Mix ranch dressing and taco seasoning mixes into the meat. Stir well. Add all other ingredients. Simmer 1 hour.

I put it all in the crockpot on low for 8 hours and it was GREAT!
Per cup of soup: 3 WW points


I served it with cornbread

Weight Watchers Cornbread
1 cup yellow cornmeal
1 cup flour (I used corn flour since I am avoiding wheat)
2 tsp. baking powder
3/4 tsp salt
1/2 tsp soda
1 (15 oz) can cream corn
1/2 cup buttermilk
2 large egg whites
2 tsp oil

Preheat oven to 400. Coat an 8-inch square pan with cooking spray.
Combine cornmeal, flour, baking powder, salt, and soda in a large bowl. Mix well.
Combine creamed corn, buttermilk, egg whites, and oil in another bowl. Mix till blended. Fold wet ingredients into dry ingredients and mix till blended. Pour batter into prepared pan and smooth the top. Bake till toothpick comes out clean, about 20 minutes. Cut into 8 squares. 3 WW points per serving.

I really love this cornbread, it is very moist and tasty. If hubby is not eating with me, I only make 1/2 the recipe (4 servings). I will take this to work for lunch tomorrow - mmmmmm GOOD!

MMMMmmmmm........I love Taco Soup!!!! My recipe is very similiar except I think that it has a can of hominy in it and I use hamburger. Matter-of-fact, I'm making it tomorrow night for supper. We're having one last Christmas get-together with my Mom, Step-dad, my brother, and his family. Mom's making homemade chicken noodle soup.

I've never had Taco soup, but I hope to try this soon. It sounds really good....except for the stewed tomatoes....maybe I can just pick them out...LOLOL...I know...for being so darn fat I sure am picky.

Oh Diana! I LOVE hominy - I'm going to put hominy in next time. Actually, i didn't put in the pinto beans, just the jalapeno kidney beans - so next time I'll sub the hominy for the pinto beans in the recipe!

That sounds delicious, I will try it. I love to add black beans too. They are good for you and healthy.

I never realized until recently, that people eat cornbread with their chili. I have never tried it but will next time.
Mine is fattening, put fritos in the bottom of the bowl, add chili, lots of cheddar cheese, lettuce, tomato and onions on top.

I usually eat crackers with my chili - but thought I'd try something different. I'd heard some people eat cornbread with chili so I thought I'd try it. It was good. Plus, I am avoiding wheat flour right now, so that eliminated the crackers. I'd love to eat fritos (that's corn and not wheat, so I COULD eat them) and and cheddar cheese - but alas, I'm trying to lose weight and fritos is not on my low fat food list!

Has anyone made cabbage soup? It is soooo good in cold weather and healthy.
I just made up the receipe myself, let me know if you would like me to give it to you.
My friend went to WW and she ate so much of it that she will not touch it now, she lost a lot of weight.

I don't measure anything. Cook ground beef, add lots of celery, onion and garlic, then add a can of diced tomatoes, 3 boullion cubes and a as much cabbage as you like. I usually put in a half head. Don't add much salt because the boullion has plenty. We have texas toast with it.
