Leftover Turkey Ball Soup
It's really leftover turkey and dressing dumplings soup.
I boiled the turkey carcass and made broth last night, stored it in the fridge and then skimmed off the fat today before heating the broth. I cut up a couple of potatoes, a few carrots, an onion, cup of celery and boiled them in the broth till tender. Then I cut up the left over turkey and put in in to simmer. Then I made turkey balls (dumplings): Combine leftover stuffing and egg whites (1 egg white for each cup of dressing) in a large bowl. Form the stuffing mixture into small balls (I made bite sized balls) and place on a microwave-safe plate. Microwave the dumplings on High for 1 1/2 to 2 minutes. Heat a large skillet over medium heat, and coat with cooking spray. Add the dumplings and cook until golden brown on all sides. Remove from pan and set aside Then I threw in the leftover corn, noodles, and cranberry sauce (the recipe says you can also put in the potatoes, if you want). I heated that mix up and last I put in the dressing balls and heated through. It is really good - I'll have to freeze some though as I have more than we can eat!!!

That sounds so good Gayle! I won't mind coming down to eat some leftovers if you really want to get rid of it

That sounds so yummy. I don't think I have enough left overs for that thought. I know what dumpling soup is but I've never actually had some.

That does sound good! We didn't have much leftover, either. My sister-in-law and I cooked enough food for an army...she even made fun of me because I made so much dressing! But guess what..they ate it ALL!! Pigs

I love having a bunch of leftovers, but this year we didn't have much at all. That's okay...I'm hoping to do better at Christmas, but we'll see.

We ate the soup again tonight and it was better than last night. I'll take it for lunch tomorrow, but then the rest will need to go into the freezer.

Yummm.......that does sound good!!! Unfortunately we just finished our turkey today!!! I'll have to remember to look this recipe up at Christmas!!
