Food Mood
I'm in a food mood tonight - I guess because I'm looking at my recipes for Thanksgiving/Christmas. Anyway, thought I'd type a few of my favorite recipes.
My husband's family makes this recipe around the holidays - it's great to set out for company or family. Jalapeno Wieners 4 lbs wieners, cut into bite size pieces 24 oz. jalapeno peppers (sliced) 1 large onion chopped 2 cloves garlic sliced thin 1 1/2 cup vinegar salt and pepper to taste Boil wieners for 5 minutes. Combine remaining ingredient and bring to boil for one minute. Mix all ingredients together in a large glass jar. Does not need to be refrigerated. As wieners are eaten, you can boil some more and add to juice. My Mom's Fudge (the BEST I've ever eaten) 2 C. sugar 1 C. heavy cream 2 TBS. cocoa (more if you want more chocolately fudge) Mix above in sauce pan on medium heat, stirring constantly. When it starts to boil add: 1 TBS. white corn syrup Boil to soft ball stage - do not scrape sides of pan while stirring - add 1 TBS butter and stir Let set 1 hour Add 1 tsp. vanilla Beat till it loses its sheen (may be 5-10 minutes) Spoon by dollops onto waxed paper immediately when it begins to stiffen and lose its sheen. It will set up quickly at this stage. Apricot Balls 1/4 cup butter or margarine softened 2 TBS orange juice 1 1/2 cups sifted powdered sugar 3/4 cup dry milk 1/2 cup coconut 1 cup dried chopped apricots Mix all together. Shape into balls, roll in powdered sugar No Bake Chocolate Cookies (my absolute fave cookies) 2 cups sugar 1/2 cup cocoa 1/2 cup butter 1/8 tsp salt 1/2 cup milk 3 cups quick cook oatmeal 1/2 cup peanut butter 1 tsp vanilla In medium pot, bring to a rolling boil and then boil the first five ingredients for 1 1/2 minutes. Stir in peanut butter, vanilla and oatmeal. Drop by spoonfuls onto waxed paper. Let cool.

Thanks for the recipes. I make the no bakes all the time. Can't keep them in my house. My son's girl friend loves them too. So i send them off to college when ever they are home for a weekend. But my son tells me they never make it back to school on the 2 hour drive.

Wow Gayle, those are great. I need to get started on my grocery list for the holidays. I try to buy a little at a time when it's on sale and then the fresh items last. Guess I should get out my recipes too.

The weiners recipe sounds really interesting. I made no-bake cookies for a volleyball cook-out and one of the dad's was cooking. He ate several of my cookies and bragged to people around town that I make the best no-bake cookies in town!!! He's wanting me to make a batch just for him!!!

Thanks for the recipes Gayle. The apricot balls sound good! I think I might try those. Never had them or heard of them.
