Mincemeat Cookies
I found my mom's recipe for mincemeat cookies. She used to make these just for me, and I found where she had written the recipe inside the cover of one of her cook books. When I stopped crying, I baked cookies I can't believe she's been gone almost 4 years. She was my very best friend. Anyway...the cookies are good
* 1 cup butter, softened * 1 1/2 cups sugar * 3 eggs * 1 jar prepared mincemeat pie filling * 3 1/2 cups all-purpose flour * 1 teaspoon baking powder * 1 teaspoon baking soda * 1 teaspoon ground cinnamon * 1/4 teaspoon salt * 1 cup chopped pecans In a large mixing bowl, cream butter and sugar. Beat in the eggs. Add mincemeat; mix well. Combine the flour, baking powder, baking soda, cinnamon and salt; add to the creamed mixture and mix well. Stir in pecans. Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350 degrees F for 14-16 minutes or until edges begin to brown. Remove to wire racks to cool.

Hey Betsi! I bet Gary would love these cookies - no he doesn't need them - but hey! it is the Holiday Season!!! He loves mincemeat pie - although I make the "mock mincemeat" (apples, oranges and spices all cooked together) for my pie.
I'm going to have to make these cookies for him!

Betsi! I made the mincemeat cookies tonight (in fact I'm not finished baking them all yet) and Gary LOVED them. He asked where in the world did I get a mincemeat cookie recipe.
He's going to the deer lease on Friday and I always have to send something along that he can eat quickly in case of low blood sugar, and these are PERFECT! Thanks so much for sharing your mom's recipe! I know you miss her lots, but she is still making people happy!

Oh Gayle, I'm so glad Gary likes them!! Mike does, too...big surprise!! Please tell Gary my mothers name was Elizabeth, and she was beautiful, inside and out Happy Thanksgiving to you both!

That's SO funny! My mom used to make buttermik pies and tell my boys that they were Vanilla Pies, lol!! They loved them, and we STILL call them Vanilla Pies
